Knob Creek Rye Barrel 'The Restaurant Guys SL-30'
Rye is more flavorful and spicy than bourbon. It's also a little more precocious. The best Bourbon is usually from the center cut of the warehouse. Great rye barrels are chosen from all over. We chose this barrel on the occasion of the 30th annivesary of Stage Left Steak. It was aged on the sixth floor of the 8-story rick house. It was bottled at 115 proof.
Description
The nose is unctuous and redolent with marzipan, burnt honey, butterscotch and toffee. It's decadently rich and viscous in the mouth, with cinnamon and allspice that get more pronounced in the finish. As it exits your palate, the finish is of dried fruit (like fruitcake) and a caramen remeniscent of sticky toffee pudding. The extended finish is all about cloves and warmth.
Rough Rider Bourbon Barrel #1607 - The Sexy Beast
This barrel is all about bass notes. Black (Pu'er) tea wafts through the nose with hints of molasses, marzipan and saddle leather. On the palate it is friendly, round, rich and mouth-filling with brown butter, nuts and marizipan. The finish is a warm glow of roasted chestnuts and game.
Rough Rider Bourbon Barrel #1586 - The Fancy Hoe
This barrel is more refined than its brother 'The Sexy Beast'. The nose is rye-dominant, with all of it's attendant peppery spice and savory notes. It is reminiscent of a warm loaf of excellent and aromatic rye bread and a significant touch of anise (which is remarkably reminiscent of caraway).
The palate is silky and rich. It's a savory umame bomb that finishes up with shockingly zippy spice that lingers and lingers. It's an exciting German sports car of a whiskey; elegant, fast, powerful.

Blend the two bourbons whiskeys in your glass in equal proportion to get a whole, greater than the sum of its parts.
Bourbons - Long Island Spirits
Our friend Rich Stabile established Long Island Spirits on The North Fork in 2007. The corn and rye is of excellent quality and from local farms. The rye is unique in that it is a winter rye planted by farmers on the fields where potatoes are grown in the summer.
After we took our staff up to the distillery in the summer of 2022, we selected two barrels to have bottled specifically for us...well really for you! Of course the common-sensical thing to do would have been to select one exceptional barrel, but we were really moved by two very different barrels. So of course, we bought them both!
Rye - Knob Creek by Booker Noe
When Booker Noe created the Small Batch Bourbon Collection in the early 1990s we were opening Stage Left Restaurant. You can be sure they were behind our bar and have been ever since. Knob Creek has always been a particular favorite.
It wasn't until 2017 that he decided to make Small Batch Rye as well! The results were, and continue to be spectacular. Bourbon is 50% corn by definition, but it almost always contains a significant percentage of rye. So while they only started bottling rye recently, they've been distilling and aging wonderful rye whisky since the beginning.
