If wines reflect the winemaker, Johannes Hirsch’s collection of Rieslings and Grüner Veltliners are full of energy and vitality.  In the 1970s, ‘Hannes’ father started organic farming and in 2006, he was one of the founding members of Respekt – a new biodynamic certification started as an alternative to Demeter, which was then the only certification. One of the finest sites in the Kamptal, Lamm takes its name not from young sheep grazing, but rather from the subsoil: Laam is a local dialect word meaning loam. This loam together with the loess in this site on the southeastern flank of the Heiligenstein makes for a deep and fertile soil, and the site’s distinctive character is enhanced by the microclimate of the south-facing slope. Together these factors render the vineyard ideal for producing extremely expressive multi-layered Grüner Veltliners, with plenty of substance and texture.

Resinous herbs and smoked black tea make for an subtle, aromatic as well as a snap of racy acidity.  There is an attractive hint of acacia from cask. Zesty, brightly juicy lemon, incisive black pepper, piquantly saline minerality contribute to an extended finish with earthy, smoky undertones..
