In constant search of precision, Yves pays particular attention to the quality of its vines and refuses the "ready-to-think". His vision of viticulture is very personal: neither conventional, nor organic, nor biodynamic. His philosophy is simple: "Produce the best grapes possible".
Origin: Selection of Condrieu plots on the granite to biotite terroir. On this soil, the viognier expresses itself with great minerality and elegance. "Les Chaillets" is the local name for terraces.
Terroirs: granite with biotites.
Grape varieties: viognier.
Viticulture: Treatments limited to the maximum depending on the weather, no insecticide to preserve biodiversity, little fertilizer and only organic. Control of vigor and yields, leaf stripping, green harvesting for better ripening of the grapes. Disbudding in the spring.
Vinification and ageing: manual harvesting, parcel and traditional vinification. Use of oenological products (indigenous yeasts) as little as possible. Vinification (alcoholic and malolactic fermentation) and ageing 50% in wooden barrels of 30 hectoliters and 50% in Burgundy barrels without racking,
Olfactory tasting: Nose on scents of stone fruits (apricot, peach), honey and flowers. Some notes of sweet spices and toasted dried fruits.
Taste tasting: Rich and gourmet palate. The slender finish is marked by the mineral freshness of the granite and gives great depth to this wine.
Ageing: To be enjoyed young on fruity aromas (3 to 4 years) or on evolutionary aromas (between 6 and 10 years).
