In constant search of precision, Yves pays particular attention to the quality of its vines and refuses the "ready-to-think". His vision of viticulture is very personal: neither conventional, nor organic, nor biodynamic. His philosophy is simple: "Produce the best grapes possible".
"Bonnivières" AOP Côte-Rôtie
At the heart of the Côte-Rôtie appellation, in the town of Ampuis, is the "locality" "Bonnivières", a beautiful hillside of micaschiste exposed is.
The cuvée "Terres Sombres" was produced mainly with the wines of this "locality".
Grape varieties: 97% Syrah, 3% Viognier.
Vinification: manual harvesting, parcel and traditional vinification. Use of oenological products (indigenous yeasts) as little as possible. In the cellar, sorting, crushing and partial destemming. Maceration of 3 weeks in open tanks.
Ageing: 18 months in barrels. Assembly of plots before bottling.
Olfactory tasting: Nose to the juicy and peppery side of Syrah, supported by a delicate woody.
Taste tasting: Round palate is fleshy, velvety tannins. A beautiful freshness gives balance and length.
